Collection: Salute: Mi Chola Aspen

As you drive into downtown Aspen you’ll see Mi Chola on the corners of East Main Street and Mill Street. This local favorite is impossible to miss, and impossible to ignore—authentic Mexican food, an endless selection of tequilas, good music, and a fun atmosphere lure people in. While the food is delicious, it was the Strawberry Marg that used to keep us returning (we’re secure enough to drink the pink, fruity libation in public). 

Now, because the Strawberry Marg is from the bygone day, the perfect drink for the patron that cannot decide between beer or tequila is the Vegas Margarita—a blend of Negro Model Cerveza with Sauza Gold—it is as good as it is original. 

“Chola,” as Aspenites call it, isn’t above impromptu beer pong and flip-cup tournaments, and if you’re generous to the bar tenders they might treat you to a fire show at the bar (just don’t sit too close, I’ve seen eager tourists walk away with singed eyebrows).
